Thursday throwaway: wine bloggers, aging wine, and a brand new AVA
More “aren’t they special” plaudits for young wine bloggers in this op-ed piece from the online edition of beveragedaily.com. The author lets us know that—at long last!—bloggers are “telling the story” that presumably has not been told before: wine lovers now have “real” people, AKA wine bloggers, to help them in their quest to find good wine. Not “technical” academics, not “corporate” hacks, not dinosaur Boomer critics, but “real persons” who can “provide a crucial link between the industry and consumers” and who understand, as never before, the “passion” of winemakers.
Finally! After centuries of being hectored, lectured and bullied by wine snobs ranging from Thomas Jefferson and Professor Saintsbury to Dan Berger, Parker and (ahem) me, consumers are being spoken to by their peers, people they can trust to not bamboozle them. I wrote the other day, concerning National Drink Wine Day, that apparently anybody can declare a National Something Day, so I’m going to propose that the fourth Thursday of each February now and henceforth forever be #National Wine Bloggers Day. I created that hashtag on Twitter. I’m urging my Congressional representatives to make it a national holiday. No work, no school, fly the wine flag high and let the nation celebrate wine blogging by, well, wine blogging. Remember what Jefferson immortally said: “A nation of wine bloggers will be a bloggy nation.”

Speaking of Dan Berger, I associate myself entirely with his remarks the other day in his column, in which he cast considerable doubt on the ability of wines to age—even wines that are very expensive and that you think, for perfectly valid reasons, have the capacity to age well.
Dan writes, “I have long noted the utter failure of some expensive reds to taste better with even as little as a year of age.” He adds that, as a reviewer, “It is one reason I am reluctant to assert wine has potential when I cannot be certain it does.” Consumers should take note: Dan Berger has tasted more old wines than most people ever will. I completely agree with his assessment. I’ve stored a lot of wine, mainly red, mainly California Cabernet Sauvignon, in various storages (small fridges, big wine units, professional wine lockers) and I can’t tell you how often I’ve been dismayed at the results. The wines become, not splendidly aged as one would hope, but “tired,” to use Dan’s word.
I believe that critics make far too much of aging wine. Bigtime “name” critics do it first, and then small wannabes mimic them. Consumers are left confused and frustrated, believing they have to age wines but not knowing which ones to age or for how long. I have my own theory how this all started: In France, a long, long time ago, winemakers did not know how to manage tannins. This was a problem compounded by often poor vintages caused by the Little Ice Age that struck Europe. The result was wines that really were “undrinkable” when they were young. Britain was the main buyer of French wine: Bordeaux and Burgundy, and for a while, when Britain was at one of her frequent wars with France, she turned to Portugal for wine, especially vintage Port: another wine impossibly tannic when young. What to do?
Turned out that many British consumers of wine, being wealthy, had large castles (ah, the good old days); and these castles had underground cellars where the temperature never warmed up much beyond the mid- to high 50s. Since these men bought their wines in enormous quantities rather than by the bottle (no corner wine store in those days), they stored the wines in these cold cellars, where they discovered—voila!—that after many years, even decades, the wines finally shed their tannins and became sweetly mellow. In this way there developed the custom of laying down wine for one’s children’s or grandchildren’s 21st birthdays, a custom we still see here in America.
But somewhere along the line arose the modern practice of tannin management, and lo and behold, most wines are perfectly drinkable upon release. They’re riper and softer than ever before in history, which makes them great to drink the first six years or so. My advice: Cellar stuff if you want to. But be prepared to be disappointed, especially with California wine.

CALIFORNIA’S NEWEST APPELLATION
As far as I can tell, most of the wines from Lamorinda (just approved by the Feds as an A.V.A.) are backyard hobby efforts. The name “Lamorinda” is an concoction of Lafayette, Moraga and Orinda, three very wealthy suburban towns just on the other side of the Caldecott Tunnel from Oakland, in the county of Contra Costa, so named by pioneers because it lay on the “opposite coast” of the Bay from San Francisco. I have long known men of wealth in that area who planted grapevines in their backyards, on slopes of the East Bay Hills; I’ve tasted some of their wines over the years, and they’re not bad. I don’t think anyone really knows if any one variety or family of varieties is best suited for Lamorinda. People grow everything from Pinot Noir to Zinfandel and, of course, Chardonnay. They even make sparkling wine. I wouldn’t hold my breath waiting for Lamorinda wines to pop up on store shelves or restaurant wine lists. Maybe some local restos, but not otherwise. Nor do I expect the somm community to discover and promote the red-hot wines of this new appellation. But good luck to my through-the-tunnel winemaking neighbors, and congrats on getting your appellation! I know what it takes, because I’m going through the process myself, up in Oregon.
Aging Cabernet Sauvignon
When I was a wine critic, I used to say that nobody really knows how these opulent Napa Valley Cabernet Sauvignons will age, because the world had never seen wines quite like them (in ripeness, in fruity phenolic richness, in tannic quality, in alcohol level, in softness), and so there was no evidence upon which to base any conclusions.
Granted, I played the prediction game—when you’re a wine critic, you have to, especially with Cabernet Sauvignon. But I was never terribly comfortable saying that such-and-such a wine would be better fifteen or twenty years down the road, and so, by the early 2000s, I began shortening my window of ageability. Instead of advising (as some other critics did) to hold that Cab until 2027 or some equally far-off date in the future, I became considerably more guarded; my window tightened to maybe eight years or a little bit longer. This wasn’t just because of some intellectual hedging of bets; it was also because of my own experiences in pulling older Cabs from my cellar and finding that they hadn’t age well.
So it was pleasing to read the comment of Michael Weis, Groth’s winemaker since 1994, that “We don’t know how these wines will age.” That’s a frank statement and Weis is to be commended. It was in an article by Laurie Daniel, of the San Jose Mercury News, whose experiences apparently match mine, for she wrote: “I’ve found that some of the riper Napa Cabs from other producers start to fade after just a few years.”
We’ll never conclusively resolve this question of “To age or not to age,” but a little objectivity is helpful. The concept of aging wine, especially in Bordeaux, arose because until fairly recently viticulture and enology were simply not advanced enough to tame the tannins that Cabernet Sauvignon (and other red Bordeaux variety) grapes can imbue in the wines. Through time and experimentation, people discovered that aging the wines in a proper cellar—cool, damp and dark—allowed the tannins to precipitate out, as sediment, which is why the modern wine bottle evolved to include the “punt” at the bottom.
Well, aging Bordeaux or Cabernet Sauvignon became an idée fixe in the minds, first, of tastemakers (merchants, writers, collectors) and from them it migrated into the minds of the average consumer. I’ve always thought it remarkable and odd how many strange conceptions the average wine drinker has about aging wine. No more than one or two percent of the world’s wines ever “need” aging to begin with (whatever “need” means), but I’d wager that most people think that any wine will improve if you age it.
With these big, lush and luscious Cabernets that California is now making, we really have to abandon the pretense that Cab needs age. But wait, there’s more! I’ll go one step further and say we have to abandon the notion that, if a Cab isn’t ageable, it somehow occupies a lower rung on the ladder of nobility. This is a mistake commonly arrived at by a kind of intellectual default: One starts the thinking process with old-fashioned ideas about ageability that are no longer relevant to our times. Then one holds onto those ideas despite the fact that they don’t conform to reality—and winds up blaming the wine for not being ageable in line with one’s conceptions, instead of blaming himself for applying anachronistic thinking to our modern times.

Premox: a consideration
Alan R. Balik has a good summary of premox in his column in the Napa Valley Register.
Premox, or premature oxidation, refers to a wine that should age well, but instead turns brown and “off” within just years of its release. The issue of premox has obsessed certain collectors, writers and winemakers for a decade or so, but is now gaining traction. At first thought to affect only white wines, like white Burgundy, it is now considered to impact red wines too, according to a Decanter article reporting on an “oxidative destruction that is not expected at such an early stage in the life cycle of fine red wine,” including from Barolo, Napa Valley, Bordeaux, the Rhône and Burgundy.
Nobody seems to know if premox is something entirely new, and, if so, what causes it. As the articles linked to in this post point out, the cause/s could be anything: global warming, superripe grapes, poor corks and closures, high alcohol, low acidity, high pH, too much new oak, low levels of SO2, excessive exposure to oxygen during the winemaking process, sur lie aging and battonage, botrytis or poor storage (Clive Coats suggested these latter two), and who knows what else. This article, from The Drinks Business, summarizes some of the technical complexities involved in understanding the problem.
It’s impossible to think about premox and not refer to one’s own experiences with older wines. As I (and many other critics) have written for years, I’ve been disappointed in older bottles more often than not. And by “old” I mean more than eight years in Cabernet Sauvignon, and more than four years in any white California wine. (Obviously there are always exceptions.) As Jane Anson describes it in the Decanter article, too many older red wines these days bear “Exotic scents of prunes and figs, the burnt toast undertones of barrel ageing, the silky mouthfeel and unmistakable heat of high alcohol.” These qualities are, of course, not what you want in a ten- or twelve-year old Napa Valley Cabernet Sauvignon that may have cost well north of $100, but common sense tells me they may be qualities that have come about due to the higher brix that grapes have been picked at over the last twenty years or so. That results in higher alcohol levels; also lower acidity, and, given the weltanschauung these days, plenty of toasty new oak. Add “micro-oxygenation,” or mox, in red wines, which also is rather common in the so-called “cult” red wines around the world, and you may have a perfect storm, in which the inherent elements of the wine begin life initially unstable, i.e. prematurely oxidized. Instability that is built into a wine may not be readily detectible when the wine is young, but with each passing year, the instabilities mount up and perturb each other, until the wine is thrown into disorder.
This is not to argue in favor of the current ethos crying for low-alcohol wines. There is not yet evidence, at least in California, that such wines age any better than higher-alcohol wines. (And they may well be less satisfying in youth.) But we have got to bear in mind that the wine world has already gone through a paradigm shift, in which people no longer care about aging their wines. Whatever they buy is consumed rather rapidly. It was only natural for winemakers around the world to respond to this shift by making wines that are softer, rounder and more delicious in their youth. If ageability is the baby that is thrown out with the bathwater, so be it.
There is one more thing to consider, and that is the matter of personal taste. It may be objected to that the subjectivity of personal taste has no place in an objective appraisal of premox, which after all is a scientific question. But a taste for older wines has never been widespread among the general public, and even experienced oenophiles may prefer their wines vigorous and young. After all, any aged wine is already on the road to senescence. Whether an eight-year old Cabernet is experiencing “the first blush of death,” as the English put it, is a matter of determining how much “death” you want in your wine. It may be because I am, at heart, a Californian, but I have never cottoned to that blush of death thing in wine. It can be “un peu beaucoup,” a bit too much. And, as Clive Coats notes, the notion of early deliciousness coupled with ageability is a bit of a stretch. “It would be idiotic,” he writes, “to expect today’s wine to be both delicious at a year and a half and to hold up for 15 years thereafter. Something has to give. I regret that it seems to be the ageing potential of the wine.”
We tend to forget, too, that we make excuses for wines that don’t rise to the level of our expectations. We say the wine is in an awkward phase, which is really an unprovable assertion, but does have the advantage of letting the wine off easy, if it isn’t showing as well as we would like. If one bottle shows wonderfully (by common consensus) while a second bottle of the same wine is a disappointment, we chalk it off to “bottle variation.” I have even heard collectors say that a power outage of an hour or so, which results in the temperature of a wine cellar rising by a degree or two, can perturb great wine so that it is no longer drinkable! This is what I mean by “making excuses.” We want our expensive wines to age well; when they do not, we offer up every reason imaginable for the failure. But Occam’s razor suggests that the simplest reason is usually the correct one: The wine wasn’t ageable in the first place.
Here in California, research into oxidation is somewhat recent but picking up intensity. This video, of Professor Andrew Waterhouse on “The Oxygen Cascade in Wine,” suggests some of the difficulties, although it is straightforward enough for the non-scientist to follow. Waterhouse’s bottom line is that lots more study is required to determine the relationship of free SO2 in wine and the effects of oxidation, including premature oxidation. Right now, he says, most of what we think we know is “speculative,” which means we’re likely to continue to be baffled by the phenomenon of wines that we think should age, but don’t.
California Cabernet Sauvignon: Wines in “crisis”, or just best enjoyed young?
I’ve wondered for many years if the big, oaky, ripely sweet Napa Cabernets I’ve given high scores to will age or not. In most cases, my suspicion had been “only moderately,” but it was awfully hard to tell, since not even I, as a wine critic, could frequently get my hands on older bottlings—and besides, many of the famous “cult” Cabs weren’t old enough to be considered “old,” by the time I stopped reviewing California wine, last March.
Still, my reviews over the years show my increasing skepticism about these wines’ longterm performance. Where once I might have suggested 15 or 20 years for my top-rated California Cabs and Bordeaux blends, by 2005 or so I was lowering my estimates, and advising readers to drink their wines immediately, or over the ensuing six years.
Much of this was based on my own experience. I would routinely pull older (ten-plus years) bottles from my cellar, only to find them prematurely old and tired. The superripe fruit had turned raisiny; the alcohol had turned hot as the fruit dropped out, and the oak, which seemed like a pleasant skein of toasty richness in youth, now appeared merely clumsy.
This is why I increasingly raised an eyebrow at some critics’ prognostications about the ageability of Napa Valley and other Cabernet Sauvignons. It did not seem likely to me that many would survive twenty years, or even fifteen, or even a dozen, for that matter. But one of the glaring deficiencies of our system of critical writing is that journalists never investigate ageability recommendations of famous critics ten of fifteen years after they’ve been issued. The reasons why not are obvious: Nobody’s got the time, nobody’s got access to the wines, and ten or fifteen years after a review has been published, nobody knows or cares about it anymore. Thus, the question of the ageability of these Big Cabs has never been adequately answered, which is really a shame.
Now, in a very important article, Decanter has addressed the situation, calling into question the ability of certain Barolos, Napa Cabs, Bordeaux, Rhones and Burgundies to age before they start exhibiting “exotic scents of prunes and figs, the burnt toast undertones of barrel ageing, the silky mouthfeel and unmistakable heat of high alcohol.” The article adds, “Before you decide whether this sounds appealing or not, consider that these signs of a sunshine-filled wine from a hot vintage might just also be indications of a wine crisis hiding in plain sight.”
It seems that more and more people who do have access to older bottles of these big wines are discovering “premox,” or premature oxidation, in them. After premox issues with certain white wines, a professor of enology in Bordeaux told Decanter, “I believe there is a similar scandal with red wine, and that in 10 years’ time it will be just as explosive as the one affecting white Burgundy has been. And it’s not limited to one region; all red wines that are expected to be aged for long periods of time – so Barolo, Napa, Bordeaux, the Rhône, Burgundy and others – are in danger of ignoring this threat.”
The article’s author, Jane Anson, pulls no punches. “I first wrote about the subject [of premox] for Decanter.com last year and quickly realised that the findings throw into doubt not only the leading viticultural practices of the past decade, but also the work of several leading critics who have amply rewarded low acidity and super-ripe fruit; two of the leading offenders for rapid ageing.” We can debate just who those “leading critics” are. The point I would like to contribute is this: I too gave very high scores to these types of wines. But I did so based on their sheer impressiveness at the time I reviewed them, which was almost always just as they were being released. I stood by my scores then, and I stand by them today, because these wines are magnificent creatures, as rich and delicious as any wines produced in human history. Thus they fully merited their high scores.
But, like I said, I increasingly warned that these wines are not long agers. I did not bemoan this fact: most people nowadays don’t care about aging wine for a long time, anyway, even if they have a decent storage area to do it.
Can the problem be reversed? The Decanter article quotes another French researcher as claiming it can be, if “two principal risk factors” are avoided: leaving the grapes on the vine to get overripe, and then using too much oxygen during the winemaking process.
But these are difficult practices to get away from. Winemakers can pick their fruit a little earlier than they used to, but not too much: if the grapes haven’t lost their green tastes and high acids then the wine won’t be any good. And exposing Cabernet to oxygen, however it’s done, is almost de rigeur these days (through pumping over, racking and various micro-ox techniques), in order to tame the troubling tannins that can be so fierce in Napa Valley Cabernet Sauvignon.
It’s worth noting, too, that Michael Rolland’s wife was interviewed for the Decanter article, and she believes that the problem of premox in red wines is overstated. “We simply protect the fruit and ensure stable conditions throughout the winemaking process,” she said.
The Decanter article certainly doesn’t resolve the issue; nothing will, at this point. But it’s an important article because it raises a profoundly important question. What’s been your experience with older (say, ten-plus years) Napa Valley Cabernet and Bordeaux blends, particularly from the 21st century?
On the anomalies of aging wine
Alan Balik has written a good analysis of tasting young wines in today’s Napa Register. Here’s my approach, which also is the one I took when I was reviewing California wines at Wine Enthusiast.
I start with the declaration that the best way to determine if a wine is going to age well is by knowing the history of the winery. This is easy in the case of (let’s say for example) a Chateau Latour. We have hundreds of years of records by wine professionals attesting to Latour’s longevity, so it’s reasonable to state that if a young Latour, from a good vintage, is balanced to begin with, it will age for a very long time.
In California, of course, we have nothing comparable to Latour’s history. The best we can do is turn to a winery like Beaulieu. Its Georges de Latour Private Reserve Cabernet Sauvignon has been around since the mid-1930s, and we know—well, I know, because I’ve been to multiple vertical tastings of it—that the wine also ages beautifully. It’s pretty much of a slam dunk for its first fifteen years. After that, it gets spottier due to vintage variations and the condition of the individual bottle. But still, it’s safe to predict fifteen years on a good Private Reserve, despite all the changes in vinification, etc. that have occurred over the decades.
Now let’s say that somebody plants a new vineyard right next to Beaulieu’s, in Rutherford. We’ll call it Chateau Gus. They make a Cabernet that’s pretty much identical to Private Reserve in style. Will it age? If we knew nothing else about the wine, we’d have to hedge our bets, wouldn’t we, and say something like “It seems like this should age well, but given the wine’s absence of any provenance, we can’t guarantee it.” However, if we knew it was right next door to Beaulieu, that would increase the odds of the wine aging well.
So far, so good. Now, let’s make things a little more complicated. Let’s take a wine like Jonata’s El Alma de Jonata Red, a Bordeaux blend of Cabernet Sauvignon, Merlot and Petit Verdot. It’s an extraordinary wine—I gave the 2007 96 points when I reviewed it in late 2012—but it’s from a place in the Santa Ynez Valley that has almost no history whatsoever of growing great, ageworthy red Bordeaux blends. So in my review, I resisted the temptation to predict its longterm future. At that point, when it was a little more than five years old, it was so lovely, it seemed to me there was no point in submitting it to the potential ravages of age.
But maybe that Jonata will march on and on to multi-decade beauty. Who knows? This is the risk of such prognostication. Of course, if I’d advised readers to hold the wine until, say, 2027, it might have been utterly undrinkable by then—but what would an outraged reader do, hunt me down and sue me? The problem of ageability is particularly difficult to determine in a young Pinot Noir, much of which in California comes from wineries that are less than ten years old (and the wines often are made from young vines). I think of the Pinots from the Santa Rita Hills, which are so tangy and delicious. We do have the example of Sanford & Benedict, which I know from personal experience ages well; but this does not necessarily translate to wines from (say) Clos Pepe, Fiddlehead or Sea Smoke, whose clones and vineyard management practices are so different. Are these twenty year wines? Ten year wines? I have no problem feeing reasonably certain that they’re six year wines, maybe even eight—but predicting them into their second decade seems to me to be much more perilous.
Anyway, most Americans don’t age wines for a long time. Most of the people I know live in cities, which means apartments or condos. They may have a temperature-controlled storage unit, but they don’t have anything that could properly be called a cellar, so even if they wanted to store a wine for twenty years, they couldn’t. Winemakers understand the realities of modern-day America, and are crafting their wines accordingly. Tannin management methodology enables them to produce wines that are drinkable right out of the bottle, or at any rate within a couple of years. And what does “drinkable” mean, anyhow? A wine that’s tannic and acidic when young might melt deliciously with pork belly, making aging irrelevant.
